Get ready to layer them with cheese, sour cream, salsa, guacamole, or whatever else you add to your enchiladas. Serve with some beans and rice on the side for the perfect Tex-Mex meal.

Ingredients

  • Pork sirloin roast: I used a 2-lb boneless pork sirloin roast in this slow cooker recipe but pork tenderloin, pork butt, or pork shoulder will work.
  • Coke: Any type of cola will work to make this enchilada recipe.
  • Red enchilada sauce: Canned red enchilada sauce makes is super simple to prepare this pork recipe.
  • Green chiles: I used a can of medium green chiles for a touch of spice. Adjust to your spice level preference.
  • Garlic: Fresh minced garlic adds the best flavor, but jarred will also work.
  • Brown sugar: Brown sugar adds the sweetness; light and dark brown sugar are both good options.
  • Taco seasoning packet: Easy-to-use taco seasoning pack packs a punch flavor-wise.
  • Tortillas: Pick up a package of fajita-sized tortillas to use in this recipe.

Variations

  • Change up the Pork: Instead of pork, use chicken or beef.
  • Instead of Red Enchilada Sauce: Use a green enchilada sauce, or use your favorite salsa or pico de gallo.
  • Modify the Chilies: Try jalapenos or chipotles in adobo sauce instead of the green chilies.

How To Make Sweet Enchilada Pork in the Slow Cooker

STEP 1 – Place the pork, coke, enchilada sauce, green chilis, garlic, half the brown sugar, and taco seasoning in an 8-quart slow cooker and stir to mix well.

STEP 2 – Cover and cook on low for 6 hours or high for 4-5 hours, flipping the pork halfway through. Once the meat shreds easily, add the remaining brown sugar and stir.

Tips

  • Store Leftovers: Place uneaten pork in an airtight container in the fridge for 2-3 days or the freezer for up to 3 months. Thaw in the refrigerator overnight before reheating.
  • Save the Juice: Save the juice leftover from cooking and use it to dip the enchiladas in as you eat.
  • Add Lime Juice: Squeezing fresh lime juice on top of the cooked meat is so delicious!
  • Lightly Spray the Crockpot: Spray the crockpot with cooking spray so clean up is a breeze.

FAQs

Is the pork spicy in this crockpot enchilada recipe?

The pork is not super spicy, but it does have a bit of a bite. You can leave the green chiles out and serve them on the side if you’re concerned about the spice level.

How do I know if the pork is fully cooked?

I find a meat thermometer takes the guesswork out of wondering if the meat is cooked. The pork should be cooked to an internal temperature of 145°F.

Can I cook the pork over the stove?

Yes, if you don’t have a crockpot, you can cook all the ingredients in a Dutch oven pot until the meat shreds easily and the pork is cooked through.

  • 1 Slow Cooker

Ingredients 

  • 2 lb boneless pork sirloin roast
  • 1/2 cup of coke
  • 1 10 oz can of red enchilada sauce
  • 1 4 oz can of medium green chiles
  • 1 tbsp minced garlic
  • 2 cups of brown sugar, divided
  • 1 1 oz taco seasoning packet
  • 8 fajita sized tortillas

Instructions 

  • Add the 2 lb boneless pork sirloin roast, 1/2 cup of coke, 1 10 oz can of red enchilada sauce, 1 4 oz can of medium green chiles, 1 tbsp minced garlic, 1 cup of brown sugar, and 1 1 oz taco seasoning packet to an 8-quart slow cooker. Stir everything around.

  • Cover and cook on low for 6 hours or cook on high for 4-5 hours. Halfway through, flip the pork. Once the meat easily shreds, add the remaining 1 cup of brown sugar and stir. Add the meat to the 8 fajita sized tortillas and add your favorite toppings! Serve and enjoy.
