- 2 lb boneless pork sirloin roast
- 1/2 cup of coke
- 1 10 oz can of red enchilada sauce
- 1 4 oz can of medium green chiles
- 1 tbsp minced garlic
- 2 cups of brown sugar divided
- 1 1 oz taco seasoning packet
- 8 fajita sized tortillas
Add the 2 lb boneless pork sirloin roast, 1/2 cup of coke, 1 10 oz can of red enchilada sauce, 1 4 oz can of medium green chiles, 1 tbsp minced garlic, 1 cup of brown sugar, and 1 1 oz taco seasoning packet to an 8-quart slow cooker. Stir everything around.
Cover and cook on low for 6 hours or cook on high for 4-5 hours. Halfway through, flip the pork. Once the meat easily shreds, add the remaining 1 cup of brown sugar and stir. Add the meat to the 8 fajita sized tortillas and add your favorite toppings! Serve and enjoy.

Instead of Red Enchilada Sauce: Use a green enchilada sauce, or use your favorite salsa or pico de gallo.
Modify the Chilies: Try jalapenos or chipotles in adobo sauce instead of the green chilies.
