Ingredients

  • 2 medium sweet potatoes
  • 2 Tablespoons olive oil divided
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cinnamon
  • salt and pepper to taste
  • 1 pound lean ground beef
  • 2 Tablespoons Taco seasoning
  • 1 large avocado
  • 2 cups cottage cheese
  • 2 Tablespoons hot honey

Instructions

  • Preheat your oven to 425°F (220°C). Wash, peel (if preferred), and dice the sweet potatoes into cubes. Toss them in a bowl with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until well coated.
  • Spread the sweet potatoes in a single layer on a baking sheet. Roast for 30 minutes or until fork-tender. Prefer air frying? Cook them at 400°F (200°C) for about 15 minutes, shaking the basket halfway through.
  • While the sweet potatoes cook, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add ground beef and break it up as it cooks. Cook until browned, then drain any excess grease. Add taco seasoning and a splash of water (about 2 tablespoons) to the browned beef. Cook for another 1–2 minutes, stirring occasionally. Remove from heat.
  • Build your bowl: Start with a base of roasted sweet potatoes, then layer on cottage cheese, taco-seasoned ground beef, diced avocado, and drizzle with hot honey. Serve warm.

Notes

Use full-fat cottage cheese for a creamier texture and richer flavor.
Flatten the sweet potatoes slightly while roasting if you want crispier edges.
