Coconut Almond Bites
These healthy coconut almond bites are made with almonds, dates, banana, and more. The perfect recipe for a quick and easy afternoon snack.

1 immersion blender
- 2 cups raw almonds
- 1 1/2 cups pitted dates
- 3/4 cup dry coconut flakes
- 1/2 medium banana
- 3 Tablespoons honey
Add whole almonds in a medium bowl and cover them with water so that there are 2 fingers above. Then cover the bowl with a plate or plastic wrap and leave for the night or at least for 10 hours. The same with dates: remove the pit and soak them with water overnight so that the water covers them.
The next day, drain the water from the soaked almonds and rinse well with water. Drain also the pitted dates (optional: you can rinse them too)
Grind the dried almonds until they become as thin as possible in a food processor.
Mix the banana and dates with an immersion blender.
Transfer the blended almonds into a medium bowl and add the thick cream of mixed banana and dates, honey and 1 tbsp of dry coconut flakes. Merge everything well together.
Make small balls with the help of a teaspoon, then roll them in the coconut flakes on the plate.
Best if made and then eaten fresh. If storing, only store in an airtight container in the refrigerator for 1 day. Can be frozen in an airtight container for up to 30 days.
