- 2 pounds sirloin steak
- 3 Tablespoons olive oil divided
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 ounces rice
- 1 cup corn
- 1 cup black beans
- 1 cup cheddar cheese shredded
- 1/2 medium avocado sliced
- 1/4 medium onion red, sliced
- 10 grape tomatoes halved
- 1 Tablespoon sour cream
- lime wedges for garnish
- cilantro chopped, for garnish
Cut the 2 pounds sirloin steak into bite-sized pieces and place them in a zipper bag with 1 tablespoon of oil, 1 teaspoon salt, and 1/2 teaspoon black pepper to marinate for at least 30 minutes.
Follow the package instructions to prepare the 2 ounces rice until it’s fluffy and cooked through.
Heat the remaining 2 tablespoons of oil in a large skillet over medium-high heat. Add the marinated steak and cook for 5-7 minutes until browned and thoroughly cooked.
Warm the 1 cup corn and 1 cup black beans in a pan. Slice the red 1/4 medium onion and 1/2 medium avocado, and halve the 10 grape tomatoes.
Spoon the cooked rice into serving bowls. Top with the browned steak, warm corn and black beans, shredded 1 cup cheddar cheese, avocado, red onion, and grape tomatoes.
OPTIONAL: Garnish each bowl with chopped cilantro , a dollop of 1 Tablespoon sour cream, and a lime wedges for squeezing.
Allow the steak to marinate for longer than 30 minutes if time permits for deeper flavor.
Substitute steak with chicken or shrimp as a variation or based on dietary preferences.
For a healthier option, you can use Greek yogurt instead of sour cream. It provides a similar creamy texture with less fat and more protein.
