1 Silicone Baking Liner
- 2 cups egg whites
- 1/2 cup cottage cheese low fat
- 1/3 cup bacon chopped into pieces
- 3 Tablespoons green onions chopped
- 1/4 cup cheddar cheese shredded
- 1/2 teaspoon table salt
- 1/2 teaspoon ground black pepper
Preheat your oven to 375°F (190°C). Spray a muffin tin with non-stick spray or use silicone molds.
In a blender, add the egg whites, cottage cheese, cheddar cheese, salt, and pepper and blend until smooth.
Pour the egg mixture into 12 muffin bite-sized cavities, or 6 regular-sized muffin cavities, filling each about 3/4 full.
Evenly sprinkle green onions and bacon bits over the top of each bite.
Bake in the preheated oven for 15-20 minutes, or until the bites are set and lightly golden.
Allow cooling in the pan before removing. Store in the fridge or freeze for later!
Use silicone muffin molds for easy removal and perfect bite sizes.
Feel free to experiment with different cheeses like feta or gruyere and add-ins like spinach or diced peppers for extra flavor and nutrients.
Include turkey sausage or chicken sausage for an extra protein boost.
You can keep them in an airtight container in the fridge for 4-5 days or freeze them for up to 6 months. For best results, allow the egg bites to cool completely before storing.
