- 8 whole Medjool dates
- 3/4 cup semisweet chocolate chips
- 3 Tablespoons crushed peanuts
- 4 teaspoons Almond butter
- 1/2 teaspoon Kosher salt
Line a baking sheet with parchment paper. If using whole dates, take a knife and carefully split the dates in half, removing the pit. Then use a glass to press and flatten the dates onto the parchment paper.
Add a half teaspoon of almond butter (or peanut butter) to the dates.
Sprinkle the tops of the dates with crushed peanuts.
Melt the chocolate, then cover the date candy with melted chocolate. OPTIONAL: Sprinkle the tops with a little kosher salt for flavor if using almond butter. If using peanut butter, top the chocolate with crushed peanut pieces.
Place the date candy into the freezer to harden the chocolate coating for about 10 minutes. Remove when ready and serve.
Makes eight pieces of candy. A serving is two pieces.

Melting Chocolate: Double boil or microwave in short bursts, stirring frequently to avoid burning the chocolate.
