- 1 cup 4% cottage cheese
- 1/4 cup maple syrup
- 1 1/2 teaspoons vanilla extract
- 1 cup almond flour
- 1/2 cup vanilla protein powder plant based
- 2 Tablespoons coconut oil
- 1/2 teaspoon kosher salt
- 1/2 cup chocolate chips
Preheat your oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
In a blender, combine the 1 cup 4% cottage cheese, 1 1/2 teaspoons vanilla extract, and 1/4 cup maple syrup. Blend until smooth.
Transfer the mixture to a bowl and stir in 1 cup almond flour, 1/2 cup vanilla protein powder, 1/2 teaspoon kosher salt, and 2 Tablespoons coconut oil.
Fold in the 1/2 cup chocolate chips and scoop the dough onto the baking sheet.
Bake for 13-15 minutes until golden.
Let cool on a wire rack.
