- 1 Tablespoon vegetable oil
- 1/2 large onion diced
- 1.5 pounds chicken breast cut into bite sized pieces
- 3 Tablespoons rice vinegar
- 3 Tablespoons soy sauce
- 2 Tablespoons hot sauce I use Frank's hot sauce
- 1/4 cup brown sugar
- 2 Tablespoons garlic minced
- 1/2 cup pineapple canned, diced
- 2 teaspoons scallions diced, for garnish
- 2 teaspoons sesame seeds for garnish
Heat the 1 Tablespoon vegetable oil over medium-high heat in a large pan. Add diced 1/2 large onion and sauté for about 5 minutes until translucent.
While the onion cooks, mix 3 Tablespoons rice vinegar, 3 Tablespoons soy sauce, 2 Tablespoons hot sauce, and 1/4 cup brown sugar in a small bowl until well combined.
Add diced 1.5 pounds chicken breast to the pan and pour the sauce over the chicken. Stir well to ensure the chicken is evenly coated. Cook until the chicken is fully cooked and the sauce has thickened into a glaze.
Stir in minced 2 Tablespoons garlic and 1/2 cup pineapple chunks, cooking for 30 seconds to incorporate the flavors. Remove from heat.
Serve the chicken over a bed of rice garnished with 2 teaspoons scallions and 2 teaspoons sesame seeds for added flavor and texture.
Make sure the chicken is evenly coated with the sauce for maximum flavor.
While optional, toppings like scallions and sesame seeds enhance the dish’s flavors and visual appeal.
