Ingredients

  • 1 cup self-rising flour
  • 16 ounces cottage cheese full fat
  • 1 egg beaten

Instructions

Oven Bake

  • Preheat your oven to 375°F (190°C) and adjust the rack to the top position. Line a baking sheet with parchment paper to prevent sticking.
  • In a food processor or blender, blend the 16 ounces cottage cheese until smooth, pausing to scrape down the sides as needed. Transfer the smooth cottage cheese to a medium bowl.

  • Add the 1 cup self-rising flour and mix until the dough starts to pull away from the sides of the bowl. Add the dough to a floured work surface.

  • Knead the dough 8-10 times until it becomes smooth. Divide the dough into four equal parts, rolling each into a ball. Roll each ball into a rope about 6-7 inches long and 1 inch thick. Join the ends to form a circle and pinch tightly to seal.

  • Place the bagel dough on the prepared baking sheet. Brush the top of each bagel with 1 egg (beaten) and sprinkle with your chosen seasoning for added flavor and texture.

  • Bake for 25-30 minutes or until they are puffed and golden brown. Allow to slightly cool before slicing and serving.

Air Fryer

  • Blend the cottage cheese in a blender or food processor until smooth. Beat the egg and set aside.
  • Add the flour to a bowl, and combine the flour and cottage cheese. Once the dough has formed, place it on a floured workstation and knead the dough 8-10 times until smooth.
  • Divide the dough into four equal parts, and create a 6-7 inch rope with each of the parts. Join the ends tightly to create a circle, then brush the tops with the beaten egg. Optional: Sprinkle with your favorite seasoning.
  • Line the air fryer basket with parchment paper and place the bagels on the parchment paper.
  • Air fry at 350 degrees Fahrenheit (175 C) for 9-11 minutes, or until the bagels are puffed and golden brown. Allow the bagels to cool slightly before slicing and serving.

Notes

The dough should be tacky but not overly sticky. Adjust with a little extra flour if necessary.
Experiment with various toppings like sesame seeds, poppy seeds, or everything bagel seasoning for different flavors.
To make gluten-free cottage cheese bagels, use a gluten-free self-rising flour blend suitable for baking.
